What is Tortello


Fresh pasta filled with potatoes. Tortello is a traditional dish from the Florentine countryside that represents, with the simplicity of the ingredients used, the area around the city. Thanks to the popularity of the Mugello valley in recent years, it has become a popular dish in many restaurants in Florence and a must for the Florentine out-of-town tour. In Mugello every family and every restaurant offer their own recipe.

Thanks to the recipe’s simplicity and the adaptability of the few ingredients, Tort'Hello offers recipes with classic sauces as well as contemporary versions.



Storytelling


Mugello 12th October 1492.

Knives, roads, rivers. Fields, farmers, cattlemen. Italian sailors sail the ocean discovering the modern age. The valley lies nearby Florence, the city of the Medici family, where the Renaissance has its origins.


Bogotá 10th August 1560.

Vegetables, ships, rivers. Cocoa, tobacco, Indios. Ships sail the waters, rivers, seas, oceans. Exchange of goods and people, globalization is only a question of speed and means of transport. In Cartagena, the port. Europe is near.


Florence 21st November 1667.

Dukes, grand dukes, gardens. Orchards, botany, tubers. The city is majestic. Incredible goods arrive from the Indies and the Americas. Medicines and plants. Novelties, things never seen before. It is the new World.



 

Storytelling


Paris 14th July 1789.

Guillotines, potatoes, revolutions. The Sun King, pommes de terre. A king against his people. Famished by the civil war, blinded by the July sun. Food revolutions. The potato is no longer an ornament, neither cattle food, but food for the people. Merci Parmentier.


Mugello 1st February 1817.

Cold, famine, priors. Seeds, farmers and cowherders. A prior and 400 seeds. Farmers without food and hope lies in a tuber. Hope that becomes the future, work, tradition. History does not start, but continues.


Mugello, present day.

Hands, grandmothers, grandchildren. Eggs, potatoes, granaries. Globalization has run its course. Tradition continues its journey, hands close the circle. Ingredients from different worlds come together in a perfect square. Tortello, born in Mugello, starts from where it originated. It will sail other seas, it will meet other hands, it will blend with new flavors, new gestures, new hopes.


Mission


Promote and share with the world a typical dish of the area where Leonardo and Lorenzo were born and raised.

The intention is that of communicating the genuineness of the dish, its history and tradition, the value it represents and through this, to tell and make known the land in which it was born, Mugello.

Tort'Hello aims to promote in the world, besides the dish, the land in which it originated. Mugello is a valley located a few kilometers north of Florence, unfortunately still unknown to many and often underestimated. Mugello is characterized by the richness of its nature, by the variety of its landscape, which encompasses colorful fields, hills and mountains, and by the presence of small picturesque villages and historical Medici residences.

Who we are


Tort’Hello is a project born from the desire to promote a typical recipe from the Mugello valley. The initiative comes from two young brothers, Lorenzo and Leonardo Dugheri, already owners of restaurant "La Torre Osteria et Bottega", located in Scarperia, Mugello valley, in the province of Florence.
